Focus Area: Hospitality
Defining Hospitality in the HoReCa Context
Traditionally, HoReCa stands for Hotel, Restaurant, and Catering. For us at the TUM Venture Lab Food Agro Biotech, this definition runs much deeper: we view hospitality as a dynamic ecosystem where food chemistry, agricultural technology, and biotechnology directly intersect with large-scale gastronomy and the end consumer. It is the vital interface where scientific breakthroughs are translated into everyday, sustainable culinary experiences.
Potential Fields of Innovation
The challenges facing the industry are complex, yet they offer immense opportunities for tech-driven startups. Our focus centers on the following key areas:
- Food Waste & Circular Economy: AI-driven systems for precise demand forecasting in commercial kitchens, upcycling of food by-products, and biodegradable, smart packaging solutions.
- Alternative Proteins & Next-Gen Food: Scaling plant-based, cultivated, or fermentation-derived alternatives specifically tailored to the functional demands of system gastronomy and catering (e.g., heat stability, texture retention, and taste).
- Smart Kitchens & Automation: Advanced robotics and IoT kitchen solutions designed to mitigate labor shortages, optimize resource efficiency (energy/water), and streamline operations.
- Transparency & Sustainable Supply Chains: Utilizing blockchain and biotech interfaces for seamless food traceability, freshness sensing, and real-time carbon footprint tracking.
How We Engage
